Last night, I ate at Mala Tang in Arlington, VA. This is one of my favorite restaurants. It is a relatively new restaurant, but they are doing everything right. It is a sichuan hot pot restaurant, where each person gets their own boiling broth to drop food into.

The broth is delicious and spicy. You also get three different flavorings to add to your sauce. One is spicy, one is sweet, and another bowl holds hot peppers.
Once you select which type of broth you want (vegetarian or traditional), you pick what food you want to cook.
My favorites I’ve tried so far:
Bok Choy
House made noodles
Pork Dumplings
Milk-marinated Beef
Enoki Mushrooms
Surf Clams
As others have said, it can get pricey. However, you are paying for the quality of the meats and vegetables. Everything is extremely fresh. They also have a very attentive staff. Every time I have visited, they have ensured that the food is good and that we have everything we need.
They also have a nice selection of beer and sake. My favorite is Tiger, the beer from Singapore:
